Gingerbread cookies:

Ingredients:
275g (10oz) plain flour
1 level tsp baking powder
100g (4oz) dark soft brown sugar
1-2 dessert sps cinnamon
2 tblsp golden syrup
1 tblsp treacle
75g (3oz) butter
1 whole egg

Oven: 170c / 325f / gas mark 3

 

Method:
- Mix all dry ingredients in a bowl
- Add the butter to form crumble
- Beat the egg and syrup and add to crumble
- Knead well and place in the fridge for 30 mins/1 hr
- Sprinkle your work surface with flour
- Roll the dough mix out until 5 - 10mm thick
- Cut the cookies out with a shape and place on a baking tray
- Bake until cookies turn golden brown (approx 10-20 mins)
- Allow to cool or place on wire rack
